It’s been my favorite food as long as I can remember. I first knew it only fried, but eventually loved it fixed lots of ways.
The women on Mom’s side of the family were experts in preparing it. In addition to being delicious it evoked warm feelings of love, family, comfort and celebration. It was an "everyday" meal also as I grew up, usually purchased from a little take-out place near our house. It was one of the first meals I learned to cook myself.
I knew I was, FINALLY, expecting a baby, because I couldn’t bear to eat chicken.
